This Spanish olive is the most commonly used varietal in olive oil production. Aromas of freshly cut grass, sweet pea, and clove compliment a luxurious buttery mouth-feel, with flavors of raw almond, chamomile, and white pepper. Liven up sweet or savory dishes or drizzle with a pinch of salt over ripe avocado, seared scallops, raw fennel, or vanilla ice cream.

Frantoio is an Italian olive cultivar. Sweet ripe olive on the nose with a buttery palate and predominantly vegetal flavor profile of celery leaf, chicory, and radicchio. The aggressive and lingering peppery finish makes this a great addition to bold dishes --- use to finish soups, stews, risottos, or drizzle generously over braised lamb with roasted artichokes.


The Tuscan is a blend of primarily 3 Italian varietals: Frantoio, Leccino, and Pendolino. Aromas of chard and ripe black olive are rounded out by a buttery palate with flavors of unripe avocado, nettle, green tea, and toasted pine nut. This would make a vibrant pesto and is appropriate for finishing savory pasta sauces, herbed corona beans, and roasted meats.

Koroneiki is a Greek varietal of olive. Tomato leaf or green tomato are forward aromatically, which is a classic trait of the Koroneiki. Slight notes of green banana, endive, and toasted walnut with a medium peppery finish. Enjoy this drizzled over grilled meats, roasted red pepper soup, or use in place of a neutral oil in chocolate cake.


Mission is a Spanish varietal of olive. The 2019 harvest is incredibly fruity with aromas of ripe black olive and green apple. It is buttery and equally fruity on the palate expressing notes of ripe black olive, pear, and apple skin, with a mild peppery finish. This would pair beautifully with blue cheese, grilled pork, or roasted eggplant.
